Sorry for taking so long to comment your "多吃肉,少吃飯──感謝林叔叔的分享." One of the reasons is because we had no electricity from Hurricane Ike until a few days ago after coming back from Taiwan.

 很抱歉,這麼久才回應你寫的那篇「多吃肉,少吃飯──感謝林叔叔的分享」。原因之一,是因為前些日子這裡受到前陣子颶風的影響停電了,直到幾天前,我們從台灣返家之後,電力才恢復。

 

You documented very well about my opinions about healthy foods. However, the title may scare many people away because it is against their conventional wisdom. You can make it more acceptable to most people by emphasizing

你把我對健康飲食的看法整理的很不錯。但是文章的標題可能會嚇到不少人,因為這違反了一般人對怎麼吃才健康的既有概念。如果你再強調以下兩點,或許這套觀念能讓人容易聽進去。

 

(1) eating as much vegetable and non-sweet fruit as possible; the source of carbohydrate from these foods is sufficient for our body needs. We don't need to rely on grains (including whole grains) as our energy source.

1)盡量多吃蔬菜與不甜的水果。從這些蔬果獲取的碳水化合物已足以提供身體的日常所需。一般人並不需要靠食用穀類(包括全穀類)提供熱量。

 

(2) don't try to avoid meats (including fishes) and fats that are NOT polluted by growth hormones or antibiotics. When we eat too much proteins or fats, our bodies have a feedback mechanism to decrease our appetite about the food. However, our bodies do not have a feedback mechanism for eating grains until our stomachs are fully stretched. By that time, we are already overeaten. In addition, eating grains causes wide swing of blood glucose and insulin levels that deteriorate our health.

 2)不要不吃沒有被生長激素或抗生素污染的肉類與脂肪(包括魚類)。當吃下過多的蛋白質或脂肪時,身體會啟動回饋機制,因而降低食慾。然而,我們的身體並沒有對於穀類的回饋機制,往往直到肚子被得太撐大時,我們才知道要放下碗筷。到了那個時候,我們已經吃得過量了。除此之外,吃穀類會造成血糖與胰島素的不穩定,這也有礙健康。

 

These two additional comments will make it closer to my opinions about what we should eat for our health.

以上這兩點能更進一步闡明我對健康飲食的看法。

In addition, please add one more important point: The main reason of gaining weight and higher cholesterol is not from consuming too much protein and fat, as most people believe or as suggested by many medical doctors, but from consuming too much grain. The excessive carbohydrate from grains is stored as fat (triglycerides) that need to be carried by cholesterol's (80-85% is produced by liver cells) in blood to fat cells. If we can reduce consuming carbohydrate from grains, triglycerides and cholesterols both will be reduced significantly in a few weeks without taking any medicine. The cholesterol medicine has many side effects that we should avoid it. 

 

除此之外,請增加以下這個重點。

體重增加與膽固醇升高的主因,並非因為吃下過多的蛋白質與脂肪,而是因為吃下過多的穀類。這違反了一般大眾的認知或是醫生的建議。如果食用了過多的穀類,攝取的碳水化合物因而過剩,身體會轉化成脂肪(三酸甘油酯)儲存在體內,靠著膽固醇在血液中運輸(80-85%由肝細胞製造),再轉化成脂肪細胞。如果能少吃穀類、降低碳水化合物的攝取,三酸甘油酯與膽固醇將在數週內,不靠藥物控制,就顯著下降。降低膽固醇的藥物有許多副作用,能不用最好。

 

Furthermore, the major culprit of blocking blood vessels is not from high cholesterol but from high homocysteine. 50% of the people having low cholesterols have the same chance of the people having high cholesterols to block blood their vessels.  Medical doctors only emphasize one side of the story to convince people to take the medicine. Homocysteine is from lacking minerals, B6, and B12 that are abundant in meats. Vegetarians typically lack B12 in foods and have higher homocysteine. However, higher cholesterols

 

 

 還有,阻塞血管的頭號其實並非高膽固醇,而是過高的半高胱氨酸。有五成膽固醇低的人,血管阻塞的機率,和膽固醇過高的人相同。醫師只會強調部分真相,說服大家服用藥物。半高胱氨酸過高的原因,來自缺乏某些礦物質、維生素B2 (應為B6,手民之誤,歹勢)B12,這些營養素肉類中的含量都極為豐富。素食者的飲食最常缺乏維生素B12,因此常有半高胱氨酸過高的問題,因而導致了膽固醇過高。
